HOW WINE IS TRADITIONALLY MADE

Vinification is the process of converting fresh grapes and their juice, called "must", into wine. Alcoholic fermentation is the principal phase. This is a natural phenomenon during which the sugars ( glucose and fructose) contained in the grapes are converted into alcohol by the action of microorganisms called yeasts. Although alcohol is quantitatively the main product of fermentation, other substances synthesized by the yeasts or present in the grapes are of prime importance for quality and style of wine. These sudstances include aromatic compounds, tannins and organic acids. Wine making is a delicate operation which differs considerably according to the type of wine : red wines, dry white wines, rose wines, sparkling wines, sweet wines, natural sweet wines and liqueur wines. www.winespectator.com
